Crafting Exceptional Chocolates with Passion

Chocolat Infini is a project born of passions – for chocolate, automation, travel, and adventure.

While travelling for six months in Costa Rica and Ecuador, I met chocolate artists whose passion was contagious. Upon returning to Quebec, it didn’t take me long; within a week in April 2024, I was roasting my first kilo of cocoa.

While most chocolate bars found in stores are made from cocoa liquor imported from Belgium or Switzerland, this bean-to-bar chocolate is crafted from single-origin, fermented cocoa beans with complete traceability, from the grower to you. This traceability allows for incredible and unique flavour profiles that will make you re-read the list of ingredients. The beans are roasted, cracked, blended, and refined right here in Magog, Quebec, Canada. Only heat, oxygen, and time are used to bring out the full flavours and aromas of the cocoa. Once the desired taste is achieved, the chocolate liquor is tempered, moulded, cooled, and then carefully hand-wrapped.

My background and passion for technology and automation mean that an ever growing number of sensors, motors, and algorithms enhance the excellence of this process with each batch.

I want to make one of the best chocolate bars in the world. The road to get there is uncertain and possibly quite long (maybe not THAT long, but I’ll let you be the judge of that ;). As a small one-person start-up, things move and change fast, and it is hard to offer guarantees, except for one: you will always get the best chocolate I can make.
